Mutton Biryani Recipe in Hindi - Hyderabadi Special
Namaste! Aaj hum mutton biryani ki recipe sikhenge. Mutton biryani ek mashhoor North Indian dish hai, jo gosht aur chawal ka swaadist mishran hai. Iske liye aapko kuch samagri aur thoda samay ki zarurat hogi. Toh chaliye shuru karte hain!
Samagri:
- 500 grams mutton (gosht)
- 2 cups basmati chawal
- 3 bade pyaaz (onion)
- 3 bade tamatar (tomato)
- 4-5 hari mirch (green chillies)
- 1 inch adrak (ginger)
- 8-10 kali lehsun (garlic cloves)
- 2 chhote chammach dahi (yogurt)
- 1 chhota chammach lal mirch powder (red chilli powder)
- 1 chhota chammach haldi (turmeric powder)
- 1 chhota chammach dhaniya (coriander powder)
- 1/2 chhota chammach garam masala powder
- 1 bada elaichi (green cardamom)
- 2-3 laung (cloves)
- 1 inch dalchini (cinnamon stick)
- 4-5 tej patta (bay leaves)
- 1 chhota chammach zeera (cumin seeds)
- 1/2 cup tel (oil)
- 1/2 cup ghee
- Namak swaad anusar
- Dhaniya patti (coriander leaves) garnishing ke liye
- Pudina patti (mint leaves) garnishing ke liye
- Kesar (saffron) soaked in doodh (milk) - optional
Vidhi:
- Sabse pehle mutton ko acche se dho kar saaf karein aur usmein namak, lal mirch powder, haldi, dhaniya powder aur dahi mila kar ache se rub karein. Isse masale gosht mein ache se mix ho jayenge aur flavors penetrate karenge. Gosht ko kam se kam 1 ghante tak marinate karne ke liye rakh dein.
- Ek bartan mein tel aur ghee garam karein. Jab tel aur ghee garam ho jayein, toh elaichi, laung, dalchini, aur tej patta daalein aur unhe thoda sa bhunein, taaki masalo ka sugandh release ho jaye.
- Ab pyaaz ko acche se kaat lein aur use golden brown hone tak bhunein. Golden brown hone par pyaaz ko nikal kar alag rakh dein.
- Ab adrak, lehsun, aur hari mirch ka paste taiyar karein. Iske liye adrak, lehsun aur hari mirch ko mixer mein daal kar paste bana lein.
- Ab kadhai mein bacha hua tel aur ghee mein adrak-lehsun-hari mirch ka paste daalein aur use bhunein, jab tak uska raw smell chala jaye.
- Bhune hue masale mein tamatar ka paste daalein aur use acche se mix karein. Masale ko dhimi aanch par 5-7 minutes tak pakayein, jab tak tamatar ka paste acche se pak jaye aur tel alag ho jaye.
- Ab gosht ko kadhai mein daalein aur use acche se bhunein. Gosht ko halka-bhura hone tak pakayein, jisse uska rang acchi tarah se badal jaye aur masale usme ache se ghuse.
- Bhune hue gosht mein ab pani daalein, takriban 2 cups ya gosht ko acchi tarah se cover karne tak. Dhyan rahein ki pani thoda thoda karke dalein, taki gosht ka texture aur rasila swaad ban sake. Gosht ko dheemi aanch par 1.5 - 2 ghante tak pakayein, ya jab tak gosht gulabi aur gal jaaye. Isse gosht ka rang aur texture behad swadisht ban jayega.
- Gosht pak raha hai tab tak, hum chawal ko saaf karte hain. Ek alag bartan mein paani garam karein aur usmein namak aur chawal daalein. Chawal ko lagbhag 70% tak pakayein, yani ki thoda kachcha reh jaaye. Ab chawal ko chaan kar alag rakh dein.
- Ek bade bartan mein ab biryani layering shuru karte hain. Pehle, ek layer pakki pakai hui chawal daalein. Uske upar gosht ka layer rakhein. Fir is par bhune pyaaz aur hari mirch, dhaniya aur pudina patti daalein.
- Iss tarah se alternate layers banate huye baki chawal, gosht, pyaaz aur masale daal kar biryani ko complete karein. Upar se dhaniya aur pudina patti se sajayein. Agar aap chahein toh kesar doodh mein bhigokar chawal ke upar bhi daal sakte hain, jo biryani ko aur khushboo aur rangin bana dega.
- Biryani ko dhak kar dheemi aanch par 20-25 minutes tak dum par pakayein. Isse biryani ka swaad aur sugandh acche se mix ho jayenge.
- Biryani pakne ke baad use halka sa chhod dein, taaki flavors acche se settle ho jayein. Fir biryani ko mix karein aur garam-garam serve karein. Dhaniya aur pudina patti se garnish karein.
- Toh yeh rahi mutton biryani ki swadist aur mazedar recipe. Isko ghar par banakar aap apne parivar aur mehmano ko khush kar sakte hain. Biryani ko raita, salad aur mirchon ke saath serve karein aur uske saath enjoy karein.
