Upma Recipe | Rava Upma | Suji Ka Upma
Upma ek mashhoor South Indian nashta hai, jo sooji se banaya jata hai. Ye dish tez tarike se ban jati hai aur swadisht hoti hai. Toh chaliye shuru karte hain!
Samagri:- 1 cup sooji (semolina)
- 2 chammach tel (oil)
- 1 chammach ghee
- 1 chammach urad dal
- 1 chammach chana dal
- 1 chammach rai (mustard seeds)
- 1 chammach jeera (cumin seeds)
- 8-10 curry patta (curry leaves)
- 2 hari mirch (green chillies), barik kaat kar
- 1 inch adrak (ginger), barik kaat kar
- 1 bada pyaaz (onion), barik kaat kar
- 1 bada tamatar (tomato), barik kaat kar
- Namak swaad anusar
- 2 1/2 cup pani (water)
- Dhaniya patti (coriander leaves) garnishing ke liye
- Ek kadhai mein tel aur ghee garam karein. Fir ismein urad dal, chana dal, rai aur jeera daalein. Inko bhunein, jab tak dal golden brown na ho jayein aur tadka Khusboodar na hone lage.
- Ab curry patta, hari mirch aur adrak daalein. Inko bhunein, taaki unki khushboo aur swad nikhar jaye.
- Bhune hue masalon mein pyaaz daalein aur use golden brown hone tak pakayein.
- Pyaaz naram ho jaane par ismein tamatar daalein aur sabko acche se milayein. Tamatar ko masalon ke sath pakayein, jab tak tamatar naram ho jayein aur masala achhe se ghul jaye.
- Masalon mein namak daalein aur acche se milayein.
- Ab sooji ko masalon mein daalein aur use acche se mix karein, taki sooji masale se acche se coat ho jaye.
- Dhyan rakhein ki sooji ko dheemi aanch par bhunein aur use continuously mix karte rahein, taaki wo acche se bhune aur lumps na banaye
- Ek saath pani daalein aur tez aanch par upma ko pakayein, sath hi sath use acche se mix karte rahein. Dhyan rakhein ki pani sooji mein ache se absorb ho jaye aur upma dhire-dhire gaadha ho jaye.
- Upma pakne ke baad, use dhimi aanch par 2-3 minutes tak pakayein, sath hi sath use cover karke aur thodi der ke liye chhod dein, taki flavors acche se ghul jayein.
- Ab upma ko plate par nikalein aur dhaniya patti se garnish karein. Upma ko garam-garam serve karein aur uske saath chutney ya sambar ka aanand uthaiye.
- Sooji ko bhunne se pehle uska rang aur swad dono acche hote hain. Isliye sooji ko dheemi aanch par acche se bhunne ka dhyan rakhein.
- Agar aapko upma mein aur crunchiness pasand hai, toh aap upma ke upar sev (crispy noodles) ya roasted peanuts bhi daal sakte hain.
- Upma ko aur swadist banane ke liye, aap usmein kaju (cashew nuts) aur kishmish (raisins) bhi daal sakte hain. Isse upma mein mitha aur namkeen ka ek accha balance banega.
- Upma ko aur healthy banane ke liye, aap sabjiyan bhi add kar sakte hain, jaise hari mirch, matar, shimla mirch, ya gajar. Inhe upma ke sath pakayein aur upma ko aur bhi nutritious bana sakte hain.
- Upma ko spicy banane ke liye, aap lal mirch powder, hing (asafoetida), aur kuti hui hari mirch bhi daal sakte hain. Isse upma ka swad aur bhi chatpata hoga.
