Malai Kofta Recipe in Hindi - मलाई कोफ्ता रेसिपी
Malai kofta ek mashhoor North Indian dish hai, jisme paneer aur aloo ke gale hue koftas creamy aur mazedar gravy mein serve kiye jate hain. Ye dish swad aur richness ke liye mashhoor hai. Toh chaliye shuru karte hain!
Samagri:
Kofta ke liye:
- 200 gram paneer, grate kar lein
- 2 aloo (potato), ubaal kar mash kar lein
- 2 chammach cornflour
- Namak swaad anusar
- 1/4 chammach lal mirch powder
- 1/4 chammach haldi (turmeric powder)
- 1 chammach adrak (ginger), barik kati hui
- 1 hari mirch (green chilli), barik kati hui
- Dhaniya patti (coriander leaves), barik kati hui
- Tel (oil) fry karne ke liye
Gravy ke liye:
- 2 bade pyaaz (onion), barik kaat kar
- 2 bade tamatar (tomato), barik kaat kar
- 8-10 kali lehsun (garlic cloves), barik kaat kar
- 1 inch adrak (ginger), barik kaat kar
- 10-12 kaju (cashew nuts), bhigoye hue
- 2 chammach malai (cream)
- 2 chammach dahi (yogurt)
- 1/2 chammach lal mirch powder
- 1/2 chammach haldi (turmeric powder)
- 1/2 chammach dhaniya (coriander powder)
- 1/4 chammach garam masala powder
- Namak swaad anusar
- 1 chammach kasuri methi (dried fenugreek leaves)
- 2 chammach tel (oil)
- 1 chammach ghee
- 1 chammach shahad (honey)
- Dhaniya patti (coriander leaves) garnishing ke liye
Kofta banane ke liye:
- Ek bartan mein paneer, mashed aloo, cornflour, namak, lal mirch powder, haldi, adrak, hari mirch aur dhaniya patti ko acche se mix karein.
- Is mixture se chhote-chhote kofta bana lein aur unhein haath se halka sa press karke shape de lein.
- Ek kadhai mein tel garam karein aur usmein kofta ko golden brown hone tak fry karein. Iske baad kofta ko nikal kar tissue paper par rakh dein, taaki extra oil absorb ho jaye.
- Ek kadhai mein tel aur ghee garam karein. Fir ismein pyaaz, lehsun aur adrak daalein. Inhe bhunein, jab tak pyaaz golden brown na ho jayein aur masalon ki khushboo nikal na aaye.
- Bhune hue masalon mein tamatar daalein aur sabko acche se mix karein. Tamatar ko masalon ke sath pakayein, jab tak tamatar naram ho jayein aur masala achhe se ghul jaye.
- Ismein bhigoye hue kaju, malai, dahi, lal mirch powder, haldi, dhaniya powder aur namak daalein. Acche se milayein aur masale ko 2-3 minutes tak pakayein, sath hi sath masale ko acche se mix karte rahein.
- Ab ismein thoda sa pani daalein aur gravy ko acche se ubal aane tak pakayein. Dhyan rakhein ki gravy thick ho jaye, lekin bahut dense na ho.
- Gravy ko blender mein daalein aur acche se blend karein, taaki wo smooth aur creamy ho jaye.
- Gravy ko wapas kadhai mein daalein aur gas par garam karein. Ismein garam masala powder, kasuri methi aur shahad daalein. Acche se milayein aur gravy ko thoda aur pakayein, taaki masalon ka swad aur khushboo acche se blend ho jaye.
- Ab ek serving dish mein gravy ko daalein aur upar se taza taza fry kiye hue kofta rakh dein.
- Malai kofta ko dhaniya patti se garnish karein aur garam-garam serve karein. Aap ise naan, roti, ya pulao ke saath enjoy kar sakte hain.
- Kofta ko fry karne se pehle, kofta mixture ko 10-15 minutes ke liye fridge mein thanda hone ke liye rakh dein. Isse kofta ka shape aur texture acche se banege.
- Gravy ko creamy aur rich banane ke liye, aap cream aur dahi ke alawa thoda sa khoya (mawa) bhi daal sakte hain. Isse gravy aur bhi makhmali ho jayegi.
- Kasuri methi ko haatho mein crush karke daalein, taaki uska swad aur sugandh acche se release ho sake.
- Agar aapko gravy mein aur thickness chahiye, toh aap gravy ko ubalte waqt thoda sa cashew paste ya poppy seed paste bhi daal sakte hain. Isse gravy aur bhi creamy banegi.
- Malai kofta ko aur swadist banane ke liye, aap kofta ke andar kuch khushboo bhara masala daal sakte hain. Iske liye, kofta mixture mein thoda sa garam masala powder, kasuri methi, aur roasted jeera powder add kar sakte hain.
