Chicken Biryani Recipe in Hindi - चिकन बिरयानी रेसिपी

Chicken biryani ek mashhoor Indian dish hai, jisme chicken, chawal aur sugandhit masalon ka istemal hota hai. Ye dish apne swad aur sugandh ke liye mashhoor hai. Toh chaliye shuru karte hain!

Samagri:

  • 500 gram murg (chicken), tukdon mein kaat kar dho lein
  • 2 cup basmati chawal

  • 1 inch adrak (ginger), barik kaat kar

  • 1/2 cup dahi (yogurt)
  • 1/2 chammach haldi (turmeric powder)
  • 1 chammach lal mirch powder (red chilli powder)
  • 2 chammach biryani masala powder
  • 1/2 chammach garam masala powder
  • 1/2 chammach zeera (cumin seeds)
  • 4-5 hari elaichi (green cardamom)
  • 4-5 laung (cloves)
  • 2 inch dalchini (cinnamon stick)
  • 2 bade tejpatta (bay leaves)
  • Namak swaad anusar
  • 2 chammach tel (oil)
  • 1 chammach ghee
  • Dhaniya patti (coriander leaves) aur pudina (mint leaves) garnishing ke liye
  • Biryani ke liye kesar (saffron) aur doodh ka mixture (optional)

Vidhi:

  • Ek bartan mein pani garam karein aur usmein namak daalein. Fir basmati chawal ko dho kar ismein daalein aur 15-20 minutes tak bhigo kar rakhein.
  • Ek kadhai mein tel aur ghee garam karein. Fir ismein zeera, hari elaichi, laung, dalchini aur tejpatta daalein. Inhe bhunein, taaki masale ki khushboo nikhar aaye.
  • Ab ismein pyaaz, adrak, lehsun aur hari mirch daalein. Inko bhunein, jab tak pyaaz golden brown na ho jayein aur masalon ki khushboo nikal aaye.

  • Ab ismein murg ke tukde daalein aur sabko acche se mix karein. Murg ko masale ke sath coat karein aur 5-7 minutes tak pakayein, sath hi sath murg ko palat-te rahein.
  • Ek pressure cooker mein bhigoye hue chawal ko paani se nikaal kar daalein. Chawal ke upar murg aur gravy ka layer banayein.
  • Pressure cooker mein chawal par 1 1/2 cup paani daalein. Fir usko pressure cooker ki lid lagakar 1 seeti tak pakayein. Fir gas band kar dein aur chawal ko thanda hone ke liye 10 minutes tak chhod dein.
  • Pressure cooker ki lid hatakar, chawal ko acche se mix karein. Dhyan rakhein ki chawal ko halka halka mix karte rahein, taaki grains tute na.
  • Biryani ko nikal kar plate par spread karein. Dhaniya patti, pudina aur kesar-doodh ka mixture se garnish karein. Isse biryani ka swad aur rang aur bhi badhega.
