Khaman Dhokla Recipe in Hindi - खमन ढोकला रेसिपी

Samagri:

  • 1 cup besan (gram flour)
  • 1/4 chammach haldi (turmeric powder)
  • 1 chammach chini (sugar)
  • 1 chammach nimbu ka ras (lemon juice)
  • 1 chammach eno (fruit salt)
  • 1/2 chammach lal mirch powder (red chilli powder)
  • 1/2 chammach hing (asafoetida)
  • Namak swaad anusar
  • 1 chhoti pyaaz (onion), barik kaat kar
  • 1/2 inch adrak (ginger), barik kati hui
  • 2 hari mirch (green chillies), barik kati hui
  • 8-10 curry patta (curry leaves), barik kati hui
  • 2 chammach tel (oil)
  • 1 chammach rai (mustard seeds)
  • Dhaniya patti (coriander leaves) garnishing ke liye
  • Nariyal (coconut) aur sev garnishing ke liye

Vidhi:

  • Ek bartan mein besan, haldi, lal mirch powder, chini, nimbu ka ras, hing, namak aur thoda sa pani daal kar acche se mix karein. Dhyan rakhein ki mixture lumps-free ho jaye aur batter ek smooth consistency ka ho.
  • Ab ek dhokla cooker ya steamer ko pani se bharein aur pani ko garam hone dein.
  • Is samay, ek thali ya dish ko tel se grease karein, taaki dhokla mixture usmein aasani se set ho sake.
  • Greased thali mein dhokla batter daalein aur use evenly spread karein.

  • Dhokla thanda hone ke baad, ek kadhai mein tel garam karein aur usmein rai daalein. Jab rai crackle kare, usmein curry patta, pyaaz, adrak aur hari mirch daalein. Inhe sauté karein, jab tak pyaaz golden brown na ho jaye.
  • Ab is tadke ko thanda hone ke baad dhokla par evenly spread karein.
  • Dhokla ko thoda sa rest hone dein, taaki wo absorb kar sake.

  • Dhokla batter mein consistency ko maintain karne ke liye pani ko thoda-thoda karke daalein aur acche se mix karte rahein, taaki lumps na banen.
  • Eno ka use karte samay, usse direct batter mein daalein aur turant mix karein, jisse batter mein bubbles banenge aur dhokla fluffy ho jayegi.
