sambar recipe - सांबर कैसे बनाएं

 Sambar ek mashhoor South Indian sabzi hai, jo toor dal (arhar dal) aur sabjiyon ke sath banai jati hai. Ye dish chawal, dosa, idli aur vada ke saath bhi khayi jati hai. Toh chaliye shuru karte hain!

Samagri:

  • 1/2 cup toor dal (arhar dal)
  • 1 cup sabji (vegetables) - jaise ki bhindi, lauki, baingan, gajar, beans, drumsticks, etc. - barik kaat kar
  • 1 bada pyaaz (onion), barik kaat kar
  • 2 bade tamatar (tomato), barik kaat kar
  • 1 inch adrak (ginger), barik kaat kar
  • 4-5 kali lehsun (garlic cloves), barik kaat kar
  • 2 hari mirch (green chillies), barik kaat kar
  • 1/2 chammach haldi (turmeric powder)
  • 1 chammach lal mirch powder (red chilli powder)
  • 2 chammach sambar masala powder
  • 1 chammach tamarind paste
  • Namak swaad anusar
  • 2 chammach tel (oil)
  • 1 chammach rai (mustard seeds)
  • 1 chammach jeera (cumin seeds)
  • 1/4 chammach hing (asafoetida)
  • 8-10 curry patta (curry leaves)
  • Dhaniya patti (coriander leaves) garnishing ke liye

Vidhi:

  • Ek pressure cooker mein toor dal aur sabjiyan daalein. Ismein namak aur pani daal kar 3 seeti tak pakayein, takriban 8-10 minutes tak, ya jab tak dal aur sabjiyan ache se gal na jayein.
  • Cooker ko thanda hone tak chhod dein. Fir usko kholein aur dal ko mash karein, chamach se.
  • Ek kadhai mein tel garam karein. Fir ismein rai, jeera aur hing daalein. Inko bhunein, jab tak rai fat na jaye aur jeera golden brown na ho jaye.
  • Bhune hue masalon mein pyaaz, adrak, lehsun aur hari mirch daalein. Inko bhunein, jab tak pyaaz golden brown na ho jayein aur masalon ki khushboo nikal aaye.
  • Ab ismein tamatar daalein aur masalon ke sath acche se milayein. Tamatar ko masalon ke sath pakayein, jab tak tamatar naram na  ho jayein aur masala achhe se ghul na jaye.
  • Masalon mein haldi, lal mirch powder, sambar masala powder aur namak daalein. Acche se milayein aur masale ko 2-3 minutes tak pakayein, sath hi sath masale ko acche se mix karte rahein.
  • Ab imli ke paste aur thoda sa pani daalein aur masale ko acche se mix karein. Isse sambar ka swad aur achaarik ho jayega.
  • Cooker mein pake hue dal aur sabjiyon ko kadhai mein daalein aur acche se mix karein. Dhyan rakhein ki sambar mein pani ki matra ko swaad anusar adjust karein.
  • Sambar ko dhimi aanch par 10-15 minutes tak pakayein, sath hi sath use cover karke aur thodi der ke liye chhod dein, taki flavors acche se ghul jayein.
  • Dhaniya patti se garnish karein aur sambar ko garam-garam serve karein. Aap ise chawal, dosa, idli, vada ke saath ya plain uttapam ke saath enjoy kar sakte hain.

Kuch aur tips:

  • Sambar ke liye aap apni pasand ki sabjiyon ka upyog kar sakte hain. Traditional sabjiyan jaise bhindi, lauki, baingan, gajar, beans, drumsticks sabhi sambar mein acche lagte hain.
  • Imli ke paste ki jagah aap imli ka pulp bhi use kar sakte hain. Iske liye imli ko pani mein bhigo kar use mash kar lein aur pulp ko sambar mein add karein.
  • Sambar ko aur swadist banane ke liye, aap tadka laga sakte hain. Ek chhoti kadhai mein ghee garam karein aur usmein lal mirch powder, hing aur curry patta daalein. Is tadke ko sambar par daalein aur mix karein. Isse sambar ka swad aur bhi Khusboodar ho jayega.
  • Sambar mein dhaniya patti ke saath thodi se nariyal ka chura (grated coconut) bhi daal sakte hain. Ye sambar ko aur bhi swadist banayega.
  • Sambar ko aur healthy banane ke liye, aap sabjiyan jaise capsicum, palak ya methi bhi add kar sakte hain. Inhe sambar ke sath pakayein aur sambar ko aur bhi nutritious bana sakte hain.
