Saman:

  • 2 cups basmati chawal (sookha karke dhokar bhigoye)
  • 2 tbsp tel (oil)
  • 1 tsp jeera (cumin seeds)
  • 4-5 lehsun ki kaliya (garlic cloves), bareek kata hua
  • 1 inch adrak (ginger), bareek kata hua
  • 1 pyaaz (onion), bareek kata hua
  • 1/2 cup shimla mirch (capsicum), bareek kata hua
  • 1/2 cup gajar (carrot), bareek kata hua
  • 1/2 cup matar (green peas)
  • 1/2 cup gobhi (cauliflower), chote florets mein kata hua
  • 1/2 cup hara pyaaz (spring onions), bareek kata hua
  • 2-3 hari mirch (green chillies), kata hua
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • 1 tbsp tomato ketchup
  • 1/2 tsp lal mirch powder (red chilli powder)
  • 1/2 tsp haldi powder (turmeric powder)
  • Namak swad anusar
  • Hara dhaniya (coriander leaves) sajane ke liye

Upyog ke tarike:

  • Sabse pehle, ek bartan mein paani garam karein aur usmein thoda sa namak daal kar basmati chawal ko ubalne ke liye daal dein. Chawal ko dhak kar 70-80% tak ubalein. Dhyan rakhein, chawal ko bahut zyada nahi ubalna hai.
  • Chawal ko ubalne ke baad use chalni mein strain kar dein aur thande paani se dho kar alag rakh dein.
  • Ek kadhai mein tel garam karein aur usmein jeera daal kar usein chatakne dein.
  • Ab kadhai mein bareek kata hua lehsun aur adrak daal kar saute karein, jab tak raw smell chale jaye.
  • Iske baad bareek kata hua pyaaz daal kar golden brown hone tak saute karein.
  • Golden brown hue pyaaz mein shimla mirch, gajar, matar, gobhi, hara pyaaz aur hari mirch daal kar achhe se mix karein. Sabziyaan thodi crunchy rehne chahiye, isliye unhe jyada nahi pakana hai.
  • Sabziyaan pakne par kadhai mein soy sauce, vinegar, tomato ketchup, lal mirch powder, haldi powder aur namak daal kar acche se mix karein. Masalo ko medium flame par 1-2 minutes tak pakayein.

  • Ab uble hue chawal ko kadhai mein daal dein aur dhyan se mix karein, taki sabziyaan aur masale acche se chawal mein mix ho jayein. Dhyan rakhein Chawal aur sabziyo ko acche se mix karne ke baad, gas ki aanch ko dheemi kar dein aur kadhai ko dhak kar 2-3 minutes tak rakh dein, taki chawal aur sabziyo ka swad ek dusre se mil jaye aur flavours acche se ghul jayein.
  • Dhak kar rakhne ke baad, gas band kar dein aur veg fried rice ko thoda thanda hone ke liye rakh dein.
  • Jab fried rice thanda ho jaye, usko ek serving plate mein nikal kar upar se kata hua hara dhaniya sajayein.
  • Veg fried rice ko garam-garam serve karein. Aap ise tomato ketchup, chilli sauce, ya soy sauce ke saath enjoy kar sakte hain.
