Saman:

  • 1 cup chana dal
  • 2 cups paani (soak karne ke liye)
  • 2 tbsp tel (oil)
  • 1 tsp jeera (cumin seeds)
  • 1/2 tsp hing (asafoetida)
  • 1 tbsp adrak-lehsun ka paste (ginger-garlic paste)
  • 2 pyaaz (onions), bareek kata hua
  • 2 tamatar (tomatoes), bareek kata hua
  • 2 hari mirch (green chillies), kata hua
  • 1/2 tsp haldi powder (turmeric powder)
  • 1 tsp lal mirch powder (red chilli powder)
  • 1 tsp dhaniya powder (coriander powder)
  • 1/2 tsp garam masala powder
  • 1 tsp amchur powder (dry mango powder)
  • 1 tsp namak (salt)
  • Hara dhaniya (coriander leaves), kata hua sajane ke liye

Upyog ke tarike:

  • Sabse pehle, ek katode mein chana dal ko dho kar acche se saf karein. Fir usko paani mein soak kar dein aur 3-4 ghante tak rakh dein. Isse dal ache se soft ho jayegi aur pakane mein jaldi taiyar ho jayegi.
  • Chana dal ko pressure cooker mein daal dein aur usmein 2 cups paani daal kar 4-5 seeti tak pakayein. Dal ko itna pakayein ki wo achhe se pighal jaye.
  • Dal taiyar hone par ek kadhai mein tel garam karein. Fir usmein jeera aur hing daal kar tadka laga lein.
  • Ab adrak-lehsun ka paste daal kar saute karein, jab tak raw smell chale jaye.
  • Iske baad bareek kata pyaaz daal kar golden brown hone tak saute karein.
  • Pyaaz golden brown hone par tamatar aur hari mirch daal kar mix karein. Tamatar gal jayein tab tak pakayein.
  • Tamatar gal jayein toh haldi powder, lal mirch powder, dhaniya powder, aur namak daal kar acche se mix karein. Masale ko medium flame par pakayein, jab tak tel chhodne lagein.
  • Ab cooker mein paki hui chana dal ko is masale wale kadhai mein daal dein. Achhe se mix karein aur dhimi aanch par 5-7 minutes tak pakayein, taki masale dal ache se mix ho jayein.
  • Ab garam masala powder aur amchur powder daal kar mix karein. Dhyan rakhein, garam masala aur amchur powder daalne se pehle, aap chane ki dal ko ek baar taste kar lein aur apne swaad anusaar masale ki matra badhaayein ya ghatayein.

  • Dal ko aur 2-3 minutes pakayein, taki masale ache se dal mein ghul jayein. Dhyan rakhein, dal ko jyada time tak pakane se wo bahut soft ho jayegi aur shape kho degi, isliye thoda dhyan se pakaayein.
  • Dal ko band kar dein aur kuch der tak dhak kar rakh dein, taki masale achhe se dal mein simat jayein aur dal ka swad badh jayein.
  • Ab garam-garam Chana Dal ko serving katode mein daal dein aur upar se kata hua hara dhaniya sajayein.
  • Chana Dal ko roti, naan, ya chawal ke saath serve karein. Aap ismein nimbu ka ras bhi nichor sakte hain, jo ki swaad ko aur badha dega.
