Kulcha Recipe in Hindi - Punjabi style
Kulcha, jo ki ek mashoor aur swadisht Punjabi dish hai, ye roti ki tarah lagti hai lekin iska texture aur swad alag hota hai. Ye maida se bani hui leavened (fermented) roti hai, jo tandoor mein pakti hai. Kulcha ko aam taur par chole, aloo, paneer ya makkhan ke saath serve kiya jata hai. Yahan main aapke saath Kulcha banane ki ek detailed recipe share kar raha hoon.
Saman:- 2 cup maida (all-purpose flour)
- 1/2 tsp namak (salt)
- 1/2 tsp cheeni (sugar)
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 cup dahi (yogurt)
- 2 tbsp tel (oil)
- 1/4 cup garam pani (warm water)
- Ajwain (carom seeds) - chutki bhar
- Makhhan (butter) ya tel (oil) kulcho ko sekne ke liye
Kulcha ke liye Masale:
- 2 bade pyaaz (onion), barik kata hua
- 2 hari mirch (green chillies), barik kata hua
- 1/4 cup hara dhaniya (coriander leaves), kata hua
- 1/2 tsp lal mirch powder (red chilli powder)
- 1/2 tsp amchur powder (dry mango powder)
- Namak swad anusar
- Ek bade bartan mein maida daalein aur usmein namak, cheeni, baking powder aur baking soda daalein. Achhe se milayein.
- Ab ismein ajwain, dahi aur tel daalein. Thoda sa garam pani daal kar achhe se milayein. Aapko isse soft atta tayar karna hai.
- Atte ko 5-10 minutes tak ache se gudgudate huye goonth lein, taki atta smooth aur elastic ho jaye. Dhyan rakhein ki atta bahut zyada knead na karein, warna kulcha hard ho jayega.
- Goondne ke baad atte ko ek gilaas ya kisi pateeli se cover karke 2 ghante tak rakh dein, taki atta ferment ho jaye aur kulcha fluffy ho.
- Atta ferment hone par use dubara ache se knead kar lein. Fir atte ko 4-5 equal parts mein vag kar lein aur har part ko gol aakar mein shape dekar chhote chhote balls bana lein. Dhyan rakhein ki balls ko acche se seam side down rakh kar cover kar dein taki wo dry na ho jaye.
- Ab ek atte ball ko thoda sa maida mein ghumayein aur use rolling pin ki madad se gol aakar mein bail lein. Kulcha ki thickness lagbhag 1/4 inch honi chahiye.
- Kulcha ke upar masale dalne ke liye, ek katore mein pyaaz, hari mirch, hara dhaniya, lal mirch powder, amchur powder aur namak lekar ache se mix karein.
- Ab ek rolled kulcha ke upar masale ka 1tsp lekar spread karein aur gently press karein, taaki masale kulcha mein acche se settle ho jayein. Masale ke saath ek taraf kulcha ko fold karein aur fir se gently press karein.
- Masale wale kulche ko halka sa maida mein ghumayein aur excess maida hatakar ek plate mein rakh dein. Isi tarah se baki kulcho ko bhi tayar karein.
- Ab tawa ya tandoor ko medium heat par garam karein. Tawa garam hone par ek kulcha ko tawa par rakhein aur use cook karne ke liye thoda sa pani kulche ke upar lagayein.
- Kulcha ko dono taraf se cook karein, tel ya makkhan se sekhte rahein, taki kulcha achhe se brown aur crispy ho jaye.
- Isi tarah se baki kulcho ko bhi cook karein. Dhyan rakhein ki kulcha evenly cook ho jayein aur dono taraf se golden brown ho jayein.
- Jab kulcha cooked ho jayein, unhe tawa se nikalein aur makkhan ya tel se lightly brush karein, taki kulcha aur swadist ho jayein.
- Kulcha garam-garam serve karein chole, aloo ki sabji, ya paneer tikka ke saath. Aap inhe plain yogurt ya raita ke saath bhi serve kar sakte hain.
