Egg Biryani Recipe - Street Style
Egg Biryani, jo ki ek mashoor aur swadisht bharatiya dish hai, non-vegetarian khane ke shaukeen logo ke liye ek mazedaar vikalp hai. Yahan main aapke saath Egg Biryani banane ki ek detailed recipe share kar raha hoon.
Saman:- 2 cup basmati chawal (rice)
- 4 ande (eggs)
- 2 bade pyaaz (onion), barik kata hua
- 2 bade tamatar (tomato), barik kata hua
- 1/4 cup dahi (yogurt)
- 2 tsp adrak-lehsun ka paste (ginger-garlic paste)
- 2 hari elaichi (green cardamom)
- 4-5 laung (cloves)
- 1 inch dalchini (cinnamon stick)
- 1/2 tsp shahi jeera (caraway seeds)
- 1/2 tsp zeera (cumin seeds)
- 2-3 badi elaichi (black cardamom)
- 1/2 tsp haldi powder (turmeric powder)
- 1 tsp lal mirch powder (red chilli powder)
- 1 tsp garam masala powder
- 1/2 tsp biryani masala
- 1/2 cup hara dhaniya (coriander leaves), kata hua
- 10-12 pudina ke patte (mint leaves), kata hua
- 4 tbsp tel (oil)
- Namak swad anusar
- Sabse pehle, ek bartan mein pani daalein aur usmein thoda sa namak daal kar use garam karein. Jab pani garam ho jaye, chawal ko dalein aur ise pakne ke liye rakh dein.
- Chawal ko 70-80% tak pakne dein. Pakne ke baad ise chhan kar side mein rakh dein.
- Ek alag kadhai mein tel garam karein aur usmein zeera, shahi jeera, hari elaichi, badi elaichi, laung aur dalchini daalein. Yeh garam masale tadakne dein taki unka sugandh nikle.
- Ab ismein pyaaz daalein aur use translucent hone tak saute karein.
- Pyaaz translucent ho jane par, adrak-lehsun ka paste daalein aur use acche se mix karein. Isko dhyan se pakayein taki masale acche se pake aur kacha pan na rahe.
- Masale ko pakane ke baad, tamatar daalein aur unko naram hone tak pakayein.
- Tamatar naram hone par, dahi daalein aur use mix kar lein. Dhyan rakhein ki masale aur dahi achhe se combine ho jayein.
- Ab ismein haldi powder, lal mirch powder, garam masala powder, biryani masala aur namak daalein. Sabhi masale ko achhe se mix karein aur masalo ko medium flame par pakayein, tel chhorne tak.
- Masale pakne par, ek kadhai mein pani garam karein aur ande ko ubalne ke liye daalein. Ande ko hard boil kar lein. Jab Ande ache se ubal jayein, unhe thande pani mein rakh kar chhilkar phir se alag se kata lein.
- Ab kadhai mein thoda tel garam karein aur usmein adrak-lehsun ka paste aur halka sa namak daalein. Paste ko thoda sa saute karein taki raw smell khatam ho jaye.
- Ab ismein kata hua pyaaz daalein aur use translucent hone tak saute karein.
- Pyaaz translucent ho jane par, ismein barik kata hua tamatar daalein aur use naram hone tak pakayein.
- Tamatar naram hone par, ismein masale - haldi powder, lal mirch powder, garam masala powder aur biryani masala daalein. Achhe se milayein aur masalo ko medium flame par pakayein, tel chhorne tak.
- Masale pakne par, ismein dahi daalein aur use acche se mix karein. Dhyan rakhein ki masale aur dahi acche se combine ho jayein.
- Ab ismein paka hua chawal daalein aur use ache se mix karein, dhyan rakhein ki chawal ache se masalo se coat ho jayein.
- Chawal ko dhakkan laga kar 10-15 minutes tak dam par rakh dein. Isse chawal aur masale ka swad acche se mil jayega.
- Ab ek alag kadhai mein tel garam karein aur usmein garam masale (hari elaichi, dalchini, laung) daalein. Ismein halka sa namak aur haldi powder bhi daalein.
- Tel mein garam masale tadakne ke baad, chawal-masala mixture ko ismein daalein aur ache se mix karein.
- Ab dhaniya aur pudina ko bhi daalein aur use acche se mix karein. Dhyan rakhein ki dhaniya aur pudina masalo mein ache se mil jayein.
- Biryani ko dheeme aanch par 10-15 minutes tak pakne dein, taki flavors acche se ghul jayein aur chawal ache se pake.
- Biryani ka gas band kar dein aur use 5 minutes tak dam par rakh dein, taki biryani ki khushboo aur swad achhe se develop ho jayein.
- Egg Biryani taiyar hai! Use hara dhaniya se sajayein aur garam-garam serve karein. Biryani ko raita, salad, ya mirchi ka achar ke saath serve kar sakte hain.
