Dhokla Recipe in Hindi - Gujarati Style

 Dhokla, jo ki Gujarat ki prasiddh mithai hai, bharatiya bhojan mein ek swadisht aur halka fulka snack ke roop mein prasidh hai. Yahan main aapke saath Dhokla banane ki ek detailed recipe share kar raha hoon.

Dhokla Recipe in Hindi - Gujarati Style
Saman:

  • 1.5 cup besan (gram flour)
  • 1/2 cup suji (semolina)
  • 1/2 cup dahi (yogurt)
  • 1 tsp nimbu ka ras (lemon juice)
  • 1 tsp eno (fruit salt)
  • 1/4 tsp haldi powder (turmeric powder)
  • 1 tsp lal mirch powder (red chilli powder)
  • 1/2 tsp hing (asafoetida)
  • 1 tsp adrak aur hari mirch ka paste (ginger and green chilli paste)
  • 1 tsp sarson ka tel (mustard oil)
  • Namak swad anusar
  • 1.5 cup pani (water)
  • 1 tsp til (sesame seeds)
  • 1 tsp curry patta (curry leaves)
  • 2 tbsp tel (oil)
  • 1 tsp rai (mustard seeds)
  • 2-3 hari mirch (green chillies), lamba kata hua
  • Hara dhaniya (coriander leaves), kata hua sajane ke liye

Upyog ke tarike:

  • Sabse pehle, ek bade bartan mein besan, suji, dahi, nimbu ka ras, haldi powder, lal mirch powder, hing, adrak aur hari mirch ka paste, sarson ka tel, aur namak daalein.
  • Iske baad, samagri ko achhe se mix karein aur usmein pani daalein. Dhyan rakhein, pani ko thoda-thoda karke daalein aur saath mein besan ke gaddhe ko achhe se tod dein, taki koi ganth na rahein.
  • Ab dhokla batter ko 15-20 minutes ke liye rukh dein, taki besan aur suji achhe se pani mein ghul jaye aur batter thoda phool jaye.
  • Is samay, dhokla banane ke liye steamer ko garam karein. Steamer ke andar paani bharein aur uski upar ek stand ya pateela rakh dein. Is stand ya pateele par dhokla batter wala bartan rakh dein.

  • Dhokla batter ko dheere-dheere greased thali mein daalein aur use level kar lein.
  • Ab ek chhanni mein eno daal kar use 1-2 tbsp pani ke saath achhe se mix karein. Enokarein.
  • Enokare hue mixture ko dhokla batter mein daalein aur use acche se mix karein, taki woh batter mein ache se phoole.
  • Steamer mein rakhne ke baad, gas ko medium-high flame par rakhein aur dhokla ko 15-20 minutes tak steam karne dein, ya jab tak dhokla pak jaaye aur toothpick inserted nikalne par saaf aaye.
  • Jab dhokla pak jaaye, gas band kar dein aur dhokla ko thoda thanda hone ke liye rakh dein.
  • Thoda thanda hone par, dhokla ko thali se nikal kar chaaku  ki madad se chhote-chhote tukde mein kaat lein.

  • Ab ek kadhai mein tel garam karein aur usmein rai, til, hari mirch aur curry patta daalein. Dhyan rakhein, rai tadakne ke baad gas ko dheemi kar dein taki tadka jyada jale na.
  • Tadka tayar hone par ise thodi der thanda hone ke liye rukh dein. Jab tadka thanda ho jaye, ise dhokla tukdon par evenly distribute karein. Dhyan rakhein ki tadka har tukde par lag jaye.
  • Ab dhokla ko 15-20 minutes tak rakh dein, taki tadka aur flavors acche se dhokle mein soak ho jayein.
  • Dhokla taiyar hai! Use hara dhaniya se sajayein aur garam-garam serve karein. Dhokla ko chutney, hari chutney ya tamatar ki chutney ke saath serve kar sakte hain.
