Dal Khichdi Recipe - Dhaba Style
Dal Khichdi, jo ki ek prachalit aur swadisht Bharatiya dish hai, woh bahut hi saral aur poushtik hai. Yeh ek sampoorn aahar hai, jisme dal, chawal aur masale ek saath pakaye jate hain, jisse ek nutritious aur satiating bhojan banta hai. Dal Khichdi garmiyo ke dino mein ya jab aap ek light aur aasani se digest hone wala bhojan chahte hain, tab bhi badiya khana hai. Iski creamy aur comfort food ki feeling aapko khushi aur santushti pradan karti hai.Toh chaliye, main aapko Dal Khichdi banane ki step-by-step recipe bataata hoon:
Saman:- 1 cup basmati chawal
- 1/2 cup arhar dal (toor dal) ya moong dal
- 1 pyaaz, bareek kata hua
- 1 tamatar, bareek kata hua
- 1 hari mirch, bareek kata hua (optional)
- 1/2 inch adrak, koota hua
- 4-5 laung (cloves)
- 2 elaichi (cardamom)
- 1 inch dalchini (cinnamon)
- 2-3 tej patta (bay leaves)
- 1/2 tsp jeera (cumin seeds)
- 1/2 tsp haldi powder
- 1 tsp lal mirch powder (optional)
- Namak swad anusar
- 2 tbsp tel (oil) ya ghee
- Kuch hari dhaniya patti, garnish ke liye
- Chawal aur dal ko achhe se dho kar paani mein bhigo dein aur 20-30 minutes ke liye rakh dein.
- Ek cooker mein tel ya ghee garam karein aur usmein jeera, laung, elaichi, dalchini aur tej patta daalein.
- Jab ye masale crackle karne lage, toh pyaaz, adrak aur hari mirch daalein aur unhe saute karein, jab tak pyaaz halka golden brown na ho jaye.
- Ab ismein tamatar dalein aur use ache se mix karein. Tamatar ko thoda galne tak pakayein.
- Tamatar masale mein haldi powder, lal mirch powder aur namak daalein aur acche se mix karein.
- Ab chawal aur dal ko achhe se dho kar usmein daal dein aur masalon ke saath milayein. Thoda sa saunf aur dhaniya powder bhi mila sakte hain (optional).
- Ab ismein paani daal kar acche se mix karein. Paani ki matra ko chawal aur dal ke ratio ke hisab se adjust karein.
- Cooker ko band karein aur 2 se 3 seetiyan bajne tak dhakkan ko lagayein.
- Ab gas ko dheemi aanch par chalayein aur khichdi ko 15-20 minutes tak pakayein, ya jab tak chawal aur dal ache se gal na jaye aur khichdi creamy consistency na ho jaye.
- Jab khichdi pak jaaye, gas band kar dein aur use thodi der thanda hone dein.
- Ab khichdi ko ache se mix karein, jisse dal aur chawal ek saath mil jaayein aur khichdi creamy aur homogeneous ho jaye.
- Ek kadai mein tel ya ghee garam karein aur usmein jeera daalein.
- Jab jeera crackle karne lage, toh usmein kadhi patta aur lal mirch powder daalein aur use mix karein.
- Is tadke ko khichdi par daalein aur ache se mix karein.
- Dhaniya patti se garnish karein aur garam-garam khichdi ko serve karein.
- Dal Khichdi ko aap plain ya saath mein dahi, papad, achaar ya ghee ke saath serve kar sakte hain. Iski creamy texture, masaledar swad aur ghee ka aroma aapko khushi aur santushti pradan karenge. Aap ismein apne pasand ke sabziyan, masale ya tadke bhi add kar sakte hain, jisse khichdi aur bhi flavorsome aur nutritious banegi.
