Rajma Chawal Recipe I राजमा चावल

Rajma chawal ek mashhoor North Indian dish hai, jisme rajma (red kidney beans) aur chawal (rice) ko ek sath pakaya jata hai. Ye dish ghar par bhi aasani se banayi ja sakti hai. Toh chaliye shuru karte hain!

Samagri:

  • 1 cup rajma (red kidney beans), raat bhar bhigoye hue
  • 1 bada pyaaz (onion), barik kaat kar
  • 2 bade tamatar (tomato), barik kaat kar
  • 1 inch adrak (ginger), barik kaat kar
  • 4-5 kali lehsun (garlic cloves), barik kaat kar
  • 2 hari mirch (green chillies), barik kaat kar
  • 2 chammach tel (oil)
  • 1 chammach jeera (cumin seeds)
  • 1/4 chammach hing (asafoetida)
  • 1 chammach lal mirch powder (red chilli powder)
  • 1/2 chammach haldi (turmeric powder)
  • 1 chammach dhaniya (coriander powder)
  • 1/2 chammach garam masala powder
  • Namak swaad anusar
  • Dhaniya patti (coriander leaves) garnishing ke liye

Vidhi:

  • Bhigoye hue rajma ko achhe se dho lein. Fir ise pressure cooker mein daalein aur paani daal kar rajma ko ubaal lein. Rajma ko 4-5 seeti tak pakayein, takriban 15-20 minutes tak, ya jab tak rajma ache se gaal na jaayein.
  • Ek kadhai mein tel garam karein. Fir ismein jeera aur hing daalein aur use bhunein, jab tak jeera sunahra na ho jaye aur hing ki khushboo na aaye.
  • Ab ismein pyaaz, adrak, lehsun aur hari mirch daalein. Inko bhunein, jab tak pyaaz golden brown na ho jayein.
  • Bhune hue masalon mein tamatar daalein aur sabko acche se mix karein. Tamatar ko masalon ke sath pakayein, jab tak tamatar naram na ho jayein aur masala achhe se ghul jaye.
  • Masalon mein lal mirch powder, haldi, dhaniya powder aur namak daalein. Acche se milayein aur masale ko 2-3 minutes tak pakayein, sath hi sath masale ko acche se mix karte rahein.
  • Ab cooker mein pakaye hue rajma ko is masale mein daalein aur sabko acche se mix karein. Dhyan rakhein ki rajma masale ke sath ache se coat ho jayein.
  • Rajma ko dheemi aanch par 15-20 minutes tak pakayein, taaki rajma aur masale acche se combine ho jayein. Sath hi sath rajma ko masalo ke sath mix karte rahein, taaki masala ache se rajma mein ghul jayein.
  • Jab rajma acche se pak jayekar rahein hain, tab ismein garam masala powder daalein aur acche se mix karein. Isse rajma ka swad aur khushboo aur bhi badhega.
  • Rajma ko aur 5-10 minutes tak pakayein, dhyan rakhte hue ki rajma ache se gaal jayein aur gravy thodi garha ho jaye. Isse rajma ke flavors aur bhi enhance honge.
  • Rajma chawal taiyar hai! Ise dhaniya patti se garnish karein aur garam chawal ke saath serve karein. Aap isko ghee, dahi, aur pyaaz ke saath bhi enjoy kar sakte hain.

Kuch aur tips:

  • Rajma ko raat bhar bhigone se pehle ise acche se dho lein aur kisi saaf bartan mein rakh dein.
  • Agar aapko rajma thoda soft aur mashy pasand hai, toh aap pressure cooker mein rajma ko 1-2 seeti aur pakayein.
  • Rajma chawal ko aur swadist banane ke liye, aap ismein thoda sa kasuri methi (dried fenugreek leaves) ya amchur powder (dry mango powder) bhi daal sakte hain.
  • Rajma chawal ko bhune hue pyaaz aur tamatar se serve karne ke liye, aap ek kadhai mein pyaaz aur tamatar ko bhunein aur rajma chawal ke upar garnish karein.
