Aloo Gobi Recipe
Aloo gobi ek pramukh North Indian sabzi hai, jisme aloo (potato) aur gobi (cauliflower) ko masalon ke sath pakaya jata hai. Ye dish ghar par bhi aasani se banayi ja sakti hai. Toh chaliye shuru karte hain!
- 2 aloo (potato), chote tukdon mein kaat kar
- 1 gobi (cauliflower), phoolon ko bade tukdon mein kaat kar
- 1 bada pyaaz (onion), barik kaat kar
- 2 tamatar (tomato), barik kaat kar
- 2 hari mirch (green chillies), barik kaat kar
- 1 inch adrak (ginger), barik kaat kar
- 4-5 kali lehsun (garlic cloves), barik kaat kar
- 1/2 chammach haldi (turmeric powder)
- 1 chammach lal mirch powder (red chilli powder)
- 1 chammach dhaniya (coriander powder)
- 1/2 chammach garam masala powder
- Namak swaad anusar
- 2 chammach tel (oil)
- Dhaniya patti (coriander leaves) garnishing ke liye
- Ek kadhai mein tel garam karein. Fir ismein adrak, lehsun aur hari mirch daalein. Inko bhunein, jab tak adrak aur lehsun golden brown na ho jayein.
- Bhune hue masalon mein pyaaz daalein aur sabko acche se mix karein. Pyaaz ko golden brown hone tak pakayein.
- Ab ismein tamatar daalein aur masalon ke sath acche se milayein. Tamatar ko masalon ke sath pakayein, jab tak tamatar naram na ho jayein aur masala achhe se ghul na jaye.
- Masalon mein haldi, lal mirch powder, dhaniya powder aur namak daalein. Acche se milayein aur masale ko 2-3 minutes tak pakayein, sath hi sath masale ko acche se mix karte rahein
- Ab ismein aloo aur gobi daalein aur sabko acche se mix karein. Masala achhe se sabzi ke sath coat ho jaye
- Dhyan rakhein ki aloo aur gobi ko acche se mix karne ke baad, kadhai mein paani na daalein. Is dish ko dhimi aanch par pakana hai, jisse sabzi ache se pake aur masala bhi ghul jaye.
- Dhimi aanch par, kadhai mein cover karke aloo gobi ko 10-15 minutes tak pakayein, ya jab tak sabziyan ache se gaal jayein. Is dauran masala ko mix karte rahein, taki sabziyan evenly pakein.
- Jab aloo gobi ache se pakein, garam masala powder daalein aur acche se mix karein. Isse sabzi ka swad aur Khushboo aur bhi badhega.
- Aloo gobi ko garnish karne ke liye dhaniya patti daalein aur halka sa mix karein
- Aloo gobi taiyar hai! Ise garama-garam roti, paratha ya chawal ke saath serve karein. Aap isko dahi, pickle aur salad ke saath bhi enjoy kar sakte hain.
- Aloo aur gobi ko sahi tarah se clean karein aur achhe se dho lein, taaki sabzi banane mein aur bhi swachhata ho.
- Gobi ko pani mein thoda namak daal kar bhigo dein, isse kachcha gobi kaatne par kitanu mar jayenge.
- Dhyan rakhein ki sabzi ko dhimi aanch par pakayein, jisse masale ache se ghul jayein aur sabziyan naram aur gaal jayein.
- Agar aapko masale se zyada chatpata swad pasand hai, toh aap hari mirch ya red chilli flakes daal sakte hain.
- Aloo gobi ko aur mazedar banane ke liye, aap kasuri methi (dried fenugreek leaves) daal sakte hain. Isse sabzi ka swad aur khushboo aur bhi badhega.
