Dum Biryani Recipe in Hindi
Dum Biryani ek mash-hoor aur lazeez dish hai, jismein gosht, chawal, aur spices ka combination hota hai. Yahaan main aapke saath Dum Biryani banane ka ek aasaan recipe share kar raha hoon.
- 500 grams gosht (mutton ya chicken)
- 2 cups basmati chawal
- 1 bada pyaaz, bareek kata hua
- 2 bade tamatar, bareek kata hua
- 1/2 cup dahi (curd)
- 1/4 cup tel (oil)
- 1/4 cup ghee
- 1/4 tsp haldi (turmeric powder)
- 1 tsp lal mirch powder
- 1 tsp dhania powder (coriander powder)
- 1 tsp jeera powder (cumin powder)
- 1 tsp garam masala powder
- Namak swaad anusar
- 1/4 cup hara dhaniya, kata hua (garnish ke liye)
- Kesar (saffron) aur doodh (milk) ka mixture, rang ke liye (optional)

- Gosht ko dho kar acche se saaf karein aur usmein namak, lal mirch powder, dhania powder, jeera powder, haldi aur dahi daal kar acche se mix karein. Gosht ko kam se kam 1 ghante tak marinate hone ke liye rakh dein.
- Chawal ko saaf kar lein aur pani mein 30 minutes ke liye bhigo dein. Baad mein chawal ko chhan lein aur side mein rakh dein.
- Ek bade bartan mein tel aur ghee garam karein aur usmein pyaaz ko golden brown hone tak bhunein.
- Bhune hue pyaaz mein tamatar daal kar pakayein, jab tak tamatar gal jayein.
- Ab marinated gosht ko bartan mein daal dein aur acche se mix karein.
- Gosht ko medium heat par pakayein, dhakkan laga kar, jab tak gosht gal jaye aur masala acche se blend ho jaye.
- Ab ek degchi (large pot) lein aur usmein gosht ka layer daal dein. Upar se bhigoye hue chawal ka layer daal dein.
- Isi tarah se alternate layers banate jayein, gosht aur chawal ka, jab tak saare chawal aur gosht istemaal na ho jayein.
- Degchi ko dhakkan se band kar dein aur dhimi aanch par 30-40 minutes tak pakayein, ya jab tak chawal aur gosht puri tarah se pak na jayein.
- Biryani ko garnish ke liye kata hua hara dhaniya se sajayein. Agar chaho toh kesar aur doodh ke mixture se biryani par rang daal sakte ho.
- Dum Biryani garam-garam serve karein.
