Chole Ki Sabji Recipe in Hindi
Chole ki Sabji, jo ki North Indian cuisine ka prasiddh dish hai, ek swadisht aur masaledar gravy wali sabji hai. Chole ki Sabji ko bhature, puri, roti, ya naan ke saath serve kiya jata hai. Yahaan main aapke saath Chole ki Sabji banane ki ek detailed recipe share kar raha hoon.
Saman:- 1 cup kabuli chane (white chickpeas), raat bhar bhigoye hue
- 2 bade pyaaz (onion), bareek kata hua
- 2 bade tamatar (tomato), bareek kata hua
- 2 tsp adrak lehsun ka paste (ginger garlic paste)
- 2 hari mirch (green chillies), bareek kata hua
- 2 tsp chole masala
- 1 tsp lal mirch powder
- 1/2 tsp haldi (turmeric powder)
- 1 tsp dhania powder (coriander powder)
- 1 tsp jeera powder (cumin powder)
- 1 tsp amchur powder (dried mango powder)
- 1/2 tsp garam masala powder
- Namak swaad anusar
- 2 tbsp tel (oil)
- 2 tbsp makhan (butter)
- Hara dhaniya (coriander leaves), kata hua garnish ke liye
Upyog ke tarike:
- Sabse pehle kabuli chane ko acche se dho kar ek bartan mein daal lein. Usmein paani daal kar chane ko raat bhar bhigoye rakhein. Isse chane ache se ubal jayenge aur pakane mein kam samay lagega.
- Bhigoye hue chane ko pressure cooker mein daal dein. Usmein namak daal kar acche se mix karein. Ab paani daalein, dhyan rakhein ki paani chane se 1-2 inch upar ho.
- Pressure cooker ko band kar dein aur chane ko medium flame par 6-7 seeti aane tak pakayein. Chane ko acche se galne tak ubalne dein, taki woh ache se mash ho jayein aur masalo mein ache se sama jayein. Chane ki texture soft honi chahiye.
- Chole pakate samay, ek kadhai mein tel garam karein aur usmein pyaaz kaate hue daal dein. Pyaaz ko golden brown hone tak sauté karein.
- Ab adrak lehsun ka paste aur hari mirch daal kar 2 minutes tak bhunein. Isse masalo ka swad aur aroma sahi se develop hoga.
- Kadhai mein tamatar daal kar pakayein, jab tak tamatar ache se gal jayein aur tel alag ho jaye. Tamatar galte samay dhyan rakhein ki woh ache se masalo mein mil jayein.
- Ab chole masala, lal mirch powder, haldi, dhania powder, jeera powder, amchur powder aur namak daal kar acche se mix karein. Masale ko dhyan se bhunne se chole ki sabji ka swad aur rang sahi aayega.
- Masale ko medium flame par 2-3 minutes tak bhunein, taki unka swad aur khushbu acche se nikle. Masale bhunne se chole ki sabji ka flavor aur richness badhega.
- Cooker mein pake hue chane ko kadhai mein daal kar acche se mix karein. Dhyan rakhein ki chane mein thoda sa pani bhi ho. Isse chole ki sabji mein gravy banegi aur masale ache se chane ko coat karenge.
- Chole ko dhakkan laga kar dhimi aanch par pakayein, 15-20 minutes tak ya jab tak masale ache se chane ko coat na kar lein. Dhire-dhire pani ko sukhne dein, taki chole ki sabji garha (thick) ho.
- Chole ki sabji pakate samay, aap ek pan mein makhan garam kar sakte hain. Makhan ko melt hone dein aur chole ki sabji mein daal dein. Makhan wale chole ka swad aur texture aur bhi mazedaar banayega.
- Garam masala powder daal kar chole ko acche se mix karein. Garam masala chole ki sabji mein ek aur layer of flavors add karega.
- Ab chole ki sabji ko dhakkan laga kar 2-3 minutes tak dhimi aanch par paka lein. Isse masale aur chane ka swad aur gehra hoga.
- Chole ki sabji ko garnish ke liye hari dhaniya se sajayein. Hara dhaniya chole ki sabji ko ek fresh aur khusbudar touch dega.
