Paneer Butter Masala Recipe (Restaurant-Style)
Paneer butter masala ek mashhoor aur swadist North Indian dish hai, jisme paneer ke tukde makhani gravy mein pake jaate hain. Ye dish restaurant-style bhi banayi jaati hai. Toh chaliye shuru karte hain!
Samagri:- 250 grams paneer (cottage cheese)
- 2 bade pyaaz (onion)
- 2 bade tamatar (tomato)
- 1 inch adrak (ginger)
- 4-5 kali lehsun (garlic cloves)
- 2 hari mirch (green chillies)
- 1/2 chammach lal mirch powder (red chilli powder)
- 1/2 chammach haldi (turmeric powder)
- 1 chammach dhaniya (coriander powder)
- 1/2 chammach garam masala powder
- Namak swaad anusar
- 2 chammach makhan (butter)
- 2 chammach tel (oil)
- 1/4 cup dudh (milk)
- 2-3 chammach malai (cream)
- Dhaniya patti (coriander leaves) garnishing ke liye
- Paneer ko thande paani mein daal kar 10-15 minutes ke liye bhigo dein. Isse paneer soft ho jayegi. Fir paneer ko acche se chaan kar nikal lein aur tukdon mein kaat lein.
- Ek kadhai mein tel garam karein aur usmein pyaaz kaat kar daalein. Pyaaz ko halka sa golden brown hone tak bhunein
- Bhune hue pyaaz mein adrak, lehsun aur hari mirch ka paste bana lein. Iske liye adrak, lehsun aur hari mirch ko mixer mein daal kar paste bana lein
- Ab tamatar ko kaat kar kadhai mein daalein aur unhe masalon ke sath milayein. Masalon ko acche se mix karein aur tamatar ko masalon ke sath pakayein, jab tak tamatar naram ho jaye.
- Tamatar pakne ke baad, ab masale daalein. Lal mirch powder, haldi, dhaniya powder aur namak daalein. Masale ko acche se mix karein aur dheemi aanch par 2-3 minutes tak pakayein, taaki masale acche se pak jayein aur unka raw swad khatam ho jaye.
- Ab is masale ko thanda kar lein aur use blender mein daalein. Acche se blend karein, takriban 1/4 cup paani ke saath, taa ki masala smooth paste ban jaye.
- Ek kadhai mein makhan aur tel garam karein. Fir ismein masala paste daalein aur use acche se bhunein. Masala bhunne ke liye dheemi aanch par 5-7 minutes tak pakaayein, sath hi sath masala ko acche se mix karte rahein.
- Bhune hue masale mein ab dudh aur malai daalein aur achhe se milayein. Isse gravy ka texture aur swad aur bhi creamy ban jayega.
- Gravy mein lal mirch powder aur garam masala powder daalein. Acche se mix karein aur gravy ko dheemi aanch par 2-3 minutes tak pakayein, taaki masale acche se ghul jayein aur gravy ka swad aur sugandh badhe.
- Ab paneer ke tukde ko gravy mein daalein aur use acche se mix karein, dhyan rakhte hue ki paneer ke tukde tute na. Paneer ko gravy mein 5-7 minutes tak pakayein, dhire-dhire chadhate hue. Isse paneer masale mein acche se ghul jayenge aur swad badhega.
- Paneer butter masala taiyar hai! Ise dhaniya patti se garnish karein aur garam-garam roti, naan, ya chawal ke saath serve karein.
- Agar aap chahein toh paneer butter masala mein thoda sa kasuri methi (dried fenugreek leaves) bhi add kar sakte hain. Ise gravy mein milakar 2-3 minutes tak pakayein. Isse masala ka swad aur khushboo aur bhi badhegi.
- Paneer ke tukde ko pani mein bhigo kar naram banane ke liye, aap use microwave mein bhi garam kar sakte hain. Paneer ko microwave-safe dish mein rakh kar 1-2 minutes tak garam karein.
- Paneer butter masala ko aur rich banane ke liye, aap thoda sa shahi paneer masala bhi add kar sakte hain. Isse masale ka swad aur mazedaar ban jayega.
